We talked about keeping your fourth of July weekend free to spend with family & friends versus cooking and prepping the whole time. We’ve covered the cute & easy outfit, we’ve covered the easy & delicious menu, and now, we need to cover the simple, but show stopping cocktail (duh!). This cocktail is summery (you can’t get more summery than a piña colada), packed with fresh fruit (umm…I hear healthy knocking), easy to make, and not to mention beautiful. So, let’s get these beauties started, so you can get back to your celebrating.

Red, White, & Blue Piña Colada

Ingredients (makes 2 cocktails)

  • 2.5 cups ice
  • 1 cup piña colada mix
  • 2 oz. rum (or more if you want to get the party started early)
  • 1 tbsp. pineapple crushed
  • 1 cup strawberries, sliced
  • 1 cup blackberries
  • 1/2 tsp. sugar
  • blender
  • 2 whole strawberries and 2 blackberries slightly cut in the middle.

Instructions

  • Place strawberries in blender and puree. Pour slowly in tall highball glasses. Place in freezer for a few minutes.
  • Rinse out blender.
  • Place piña colada mix, rum, crushed pineapple, and ice in a blender. Blend until smooth.
  • Take out glasses and scoop piña colada mixture slowly on top of the strawberry puree. (I just used a measuring spoon and spooned in a little at a time). You will have a little left over, so don’t use it all. Make sure to leave room for the blackberry.
  • Rinse out blender.
  • Place blackberries in blender with 1/2 tsp. sugar and puree.
  • Pour on top of piña colada mixture and garnish with strawberry and blackberry.
