Let’s be honest, there are days when you feel like “cheffing” and really proving to yourself that you were a master chef in your past life and then there are days when you have no groceries, don’t feel like cooking, but are starving. Lazy day, meet trash tacos (annnnd cue romantic love song and awkward slow motion walk).
This exact scenario happened to my husband and I on Sunday. I was getting back from traveling all weekend and he had been alone with our dogs all weekend (note to self, not the best idea for that long), so we were pooped. We didn’t feel like getting dinner out, didn’t have a lot in the fridge, so we went to our lazy go to, trash tacos. Trash Tacos are where we take whatever we can find in the fridge and pantry and make a taco dinner (not actual trash, for the record).
It tends to not be that crazy, because onions, garlic, tomatoes, and jalapeños are staples in our house, which immediately gives you a good base for a yummy taco. To those ingredients, for this go round, we added frozen ground beef (if you don’t already know, you can cook down ground meat from the frozen state in a pinch), mushrooms, shredded cheese, sriracha, and luckily I’ve got some cilantro really growing strong, so added that in there too. We seasoned the ground beef with standard pantry spices (garlic powder, onion powder, cayenne, a pinch of oregano, salt and pepper.
We did veggies in one pan, beef in another, warmed up some corn (frozen), warmed up some tortillas, and topped it all with sriracha and cilantro, and boom, trash tacos are whats for dinner!
