what if i do | etc

Today, I am rounding out my first official week at Trunk Club. I already feel miles ahead of where I was on Monday, but as with any new job, it can feel so overwhelming. We are learning so much about men’s style, brands, and just overall new hire information, so I feel like a fully saturated sponge right now (thank goodness it’s Saturday, time to squeeze out). It can be really intimidating in such a high-pace environment with really high expectations. I have said this week, more times than I’m proud of, “What if I don’t hit my goals?,” “What if I don’t catch on quick enough?,” “What if I don’t succeed at this and get fired?” I actually didn’t even realize I was being so self-deflating until my new boss, who is seriously an amazing woman, (she doesn’t know I write this blog, so that is not in there for a little boost, but I’m considering telling her now that I threw that in there) caught me saying this to one of the girls on my time and asked if we could chat. She pulled me off to the side and said “I need you to write this on a post it and put it on your laptop, your desk, and in your house somewhere. What if I do?” She went on to explain that she was so much like me when she started, but finally someone told her to stop worrying about the don’ts and start focusing on the do’s. I felt a light go off, it was flashing a big yellow “duh” sign in it. All it takes is a shift in mindset and the exact same position seems like a new job entirely!

(yep, that’s gravy)

If your home is anything like my home, when November hits, thoughts of green bean casserole and pumpkin pie are dancing in your head. If I’m being totally honest, we actually do a smaller Thanksgiving meal (we’ll call it Thanksgiving “supper”) at least once before the big day (not saying any names, but it’s usually when a certain husband’s cravings start to get the best of him). Needless to say, we (or one of the we, wink wink) didn’t quite make it to the finish line again this year and we made a Thanksgiving supper.

In case you were wondering, the same holds true with supper as it does the big meal, leftovers are plentiful, so finding a new way to serve up leftovers is key (especially when Thanksgiving meal is up next on the docket). This year, I created a Thanksgiving burger that encompasses all the best parts of your leftovers. I made a turkey burger (just to mix it up a bit), infused with the traditional thanksgiving spices, topped with my homemade cranberry sauce, tempura fried stuffing (yes please!) and all topped with gravy (my husband smeared some mashed potatoes on there too just for good luck). The layers of flavor were great and we both had leftover leftovers again the next night (I’m not proud of that) so I thought I’d share the recipe. Cheers to leftovers for days (or weeks for those with no control).

We are officially tip toeing on the edge of holiday season (woo hoo!). I love this time of year because I get to sit around a dining room table passing the rolls, laughing at family stories, sharing joy, and filling up on warmth and love (and obviously too much pie). This is a newer holiday reality for me again and although I am really big into the holiday spirit, it hasn’t always been a positive journey (here is a fair warning, there are some real feels coming, but I promise, there is some joy in there).
