When it is warm outside, it is extremely tempting to not cook and just go find a patio to enjoy dinner on. As much as I love going out, my waistline and my bank account scream at me every time I start to get carried away. Because my husband prefers eating at home and mostly goes out to please me (bless his heart), I decided I needed to make a menu that is delicious and healthy, but also easy to make so we can eat at home while still enjoying some outdoor time on our patio. Prepare yourself for a homemade Mexican fiesta that is fit for a date night in or to host your favorites for game night (you’re welcome wallet and waistband).

It is going to be 80 degrees here in Texas this afternoon, so if you need me, I will be on my patio with this margarita in hand (that counts as Friday night plans right?)
